Deftige Salate für den Herbst

(BZfE) Wenn die Temperaturen sinken, steigt der Appetit auf Deftiges und Warmes. Auch der Salat darf an grauen Herbsttagen etwas üppiger ausfallen. Da trifft knackiges Grün auf Ofengemüse, Hülsenfrüchte, Ziegenkäse und Schinken.

Saisonale Zutaten ermöglichen viel Abwechslung. Dazu zählen verschiedene Kohlarten wie Rot- und Grünkohl, Pilze, Fenchel, Kürbis, Nüsse, frische Kräuter, aber auch fruchtige Komponenten wie Trauben, Pflaumen, Feigen und Birnen. Zarte Blattsalate bereitet man am besten getrennt zu, damit sie nicht zerdrückt werden. Erst auf dem Teller finden die unterschiedlichen Zutaten zu einem bunten Potpourri zusammen. Deftige Salate schmecken gut und machen satt.

Herbstsalat mit warmen Pilzen
Wie wäre es mit einem Herbstsalat mit warmen Pilzen? Dazu die Steinpilze in einer Pfanne anbraten, mit Paprikastreifen und Radieschen mischen und kräftig würzen. Kopfsalat wird in mundgerechte Stücke gezupft und mit Zwiebelringen und einer Vinaigrette angemacht, bevor man ihn auf das Gemüse schichtet. Dazu passt kross gebratener Schinken. Der Salat ist mit frischem Baguette ein sättigendes Mittagessen, passt als Beilage aber auch zu Kurzgebratenem und Pellkartoffeln.

Mediterran
Wer es mediterran mag, bereitet ein Ofengemüse aus Auberginen und Zucchini zu. Das Gemüse in Scheiben schneiden, mit Öl beträufeln und auf einem Backblech verteilen. Anschließend kommt es für 15 Minuten bei 180 Grad Celsius in den Ofen. Für eine weitere Viertelstunde gibt man mit Honig beträufelten Ziegenkäse hinzu. In der Zwischenzeit Romanasalat und Rucola mit einem Essig-Öl-Dressing anrichten und alle Zutaten auf einem Teller servieren. Walnussstückchen geben dem Salat mehr Biss.

Fruchtig
Wer es fruchtig mag, kann in der Salatschüssel gerösteten Fenchel mit Orangen und frischer Minze oder süßsauren Kürbis mit Äpfeln und Rosinen kombinieren. Auch Kohlarten sorgen für Herbststimmung. Rosenkohl harmoniert zu karamellisierten Orangen und Grünkohl zu Granatapfel, während im Rotkohlsalat Feta und Datteln interessante Akzente setzen. Zum fruchtigen Salat passt ein Dressing aus Walnussöl, Himbeeressig, Dijon-Senf, Salz, Pfeffer und einem Löffelchen Honig. Nicht zuletzt eignen sich viele Salatarten auch für die warme Küche. Schiffchen aus gedünstetem Chicoreé schmecken mit Curry-Hähnchenfilet und gerösteten Haselnüssen, und ein warmer Radicchio lässt sich im Risotto genießen.
