Barbecue bei Minusgraden

(BZfE) Wintergrillen entwickelt sich zu einem Trend. Es wird immer populärer, auch bei Schnee und Minusgraden den Grill anzuheizen.

Dafür braucht es nicht mehr als einen normalen Holzkohlegrill mit einem gut isolierten Deckel, zum Beispiel einen Kugelgrill. Der Grill wird vorgeheizt und immer nur kurz geöffnet, damit die Hitze nicht verloren geht.

Bei kühlen Außentemperaturen muss für das Grillen deutlich mehr Zeit eingeplant werden. Fleisch und Fisch garen schneller und gleichmäßiger, wenn sie vorher auf Raumtemperatur erwärmt werden. Bei großen Stücken ist die Wartezeit lang. Kleine Steaks, Filets, Würstchen oder Meeresfrüchte sind daher für das Wintergrillen besser geeignet.

Beilagen
Auch die Beilagen lassen sich auf dem Rost zubereiten. Im Winter bieten sich dafür saisonale Gemüse wie Rotkohl, Wirsing, Lauch, Kürbis, Pastinake, Schwarzwurzel und Maronen an. Zu gegrilltem Rosenkohl schmeckt eine würzige Barbecue-Soße. Kartoffelgratin, Folienkartoffeln und warmer Schafskäse kommen in den Wintermonaten besser an als kalter Kartoffel- oder Nudelsalat. In einer Feuerschale wird dazu Stockbrot geröstet: Einfach den rohen Teig auf einen Holzstock stecken und ins offene Feuer halten. Das sorgt auch für eine kuschelige Wärme am Grillplatz.

Etwas Süßes
Zum Abschluss darf es etwas Süßes sein etwa ein gefüllter Bratapfel oder ein süßer Flammkuchen mit Birnen und Zimt. Für gegrillte Banane wird die Frucht auf den Rost gelegt, bis sie von beiden Seiten schwarz ist. Mit einem scharfen Messer aufschneiden, das heiße Fruchtfleisch aus der Schale lösen und mit etwas Honig, Schokoladensoße oder einem Schuss Eierlikör servieren.

Getränke
Natürlich darf das Grillgut auf dem Weg zum Esstisch nicht kalt werden. Fleisch, Fisch und Gemüse direkt auf den vorgewärmten Teller. Und statt einem kühlen Bier passt zum winterlichen Grillevent ein Glühwein oder ein alkoholfreier Früchtepunsch.(Presseservice:Heike Kreutz/BZfE /Foto:PixabayRitaE)
